Recipe: Classic Chicken Tikka Masala

Ingredients:

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons paprika

2 teaspoons ground coriander

1 teaspoon turmeric

1 teaspoon garam masala

Salt and pepper, to taste

For the Masala Sauce:

2 tablespoons vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon ground cumin

1 tablespoon ground coriander

1 tablespoon paprika

1 teaspoon turmeric

1 teaspoon garam masala

1 can (14 oz) crushed tomatoes

1 cup heavy cream

Salt and pepper, to taste

Chopped fresh cilantro, for garnish

Instructions:

In a bowl, combine the yogurt, lemon juice, ground cumin, paprika, ground coriander, turmeric, garam masala, salt, and pepper. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the grill or broiler to medium-high heat. Thread the marinated chicken onto skewers and grill or broil until cooked through and slightly charred, about 5-7 minutes per side. Remove from heat and set aside.

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened and translucent.

Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

Add the ground cumin, ground coriander, paprika, turmeric, and garam masala to the skillet, and cook for 1-2 minutes until aromatic.

Pour in the crushed tomatoes and bring the mixture to a simmer. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.

Stir in the heavy cream and cooked chicken tikka pieces. Simmer for another 5-10 minutes, until the chicken is heated through and the sauce reaches your desired consistency.

Season with salt and pepper to taste. Garnish with chopped fresh cilantro before serving.

Serve the Chicken Tikka Masala hot with steamed rice or naan bread.
