Instructions:


Heat the vegetable oil in a large skillet over medium heat. Add the mustard seeds and cumin seeds, and fry until they start to splutter.

Add the finely chopped onion and green chilies to the skillet, and sauté until the onion turns translucent.

Stir in the diced potatoes, ground turmeric, ground cumin, ground coriander, chili powder, and garam masala. Mix well to coat the potatoes evenly with the spices.

Cover the skillet and cook the potatoes over medium-low heat for 15-20 minutes, stirring occasionally, until the potatoes are tender and cooked through.
