1 cup green peas, boiled

1 small onion, finely chopped

2 green chilies, finely chopped

1 teaspoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander seeds, crushed

1/2 teaspoon turmeric powder

1/2 teaspoon garam masala

1/2 teaspoon chili powder (adjust to taste)

Salt, to taste

Fresh cilantro leaves, chopped

Vegetable oil, for frying

Instructions:


In a large mixing bowl, combine the all-purpose flour, vegetable oil, and salt. Gradually add water, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

In a separate bowl, prepare the filling by mixing together the mashed potatoes, boiled green peas, chopped onion, chopped green chilies, ginger-garlic paste, cumin seeds, crushed coriander seeds, turmeric powder, garam masala, chili powder, salt, and chopped cilantro leaves. Mix well to combine.

Divide the dough into equal-sized balls and roll each ball into a thin circle.

Cut each circle in half to form semi-circles.

Take one semi-circle and fold it into a cone shape, sealing the edges with water.

Fill the cone with the prepared potato filling, then seal the open edge to form a triangular shape.

Repeat the process with the remaining dough and filling.

Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the samosas in the oil, frying in batches until they turn golden brown and crispy.

Remove the fried samosas from the oil and drain them on paper towels to remove excess oil.

Serve hot with your favorite chutney or dipping sauce.
