2 onions, finely chopped

3 tomatoes, chopped

3 cloves garlic, minced

1-inch ginger, grated

2 green chilies, slit lengthwise

2 tablespoons curry powder

1 teaspoon turmeric powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon chili powder (adjust to taste)

1/2 teaspoon ground black pepper

Salt, to taste

2 tablespoons vegetable oil

Fresh cilantro leaves, chopped, for garnish

Instructions:

Heat vegetable oil in a large pot or skillet over medium heat. Add the chopped onions and cook until they are soft and translucent.

Add the minced garlic, grated ginger, and slit green chilies to the pot. Sauté for a few minutes until fragrant.

Stir in the curry powder, turmeric powder, ground cumin, ground coriander, chili powder, ground black pepper, and salt. Cook the spices for a minute to release their flavors.

Add the chopped tomatoes to the pot and cook until they break down and form a thick sauce.

Add the beef pieces to the pot and coat them evenly with the spice mixture.

Pour enough water to cover the beef and bring the curry to a simmer. Cover the pot and cook for 1-1.5 hours, or until the beef is tender.

Once the beef is cooked, taste the curry and adjust the seasoning if necessary.
